Easy Potato, Eggs, Bell peppers, Onions and Cheese Skillet Recipe. 

Easy to make, and wonderful for a tight budget. This recipe is great for breakfast lunch or dinner and you can add more ingredients if you like too! (mushrooms, bacon, ham, etc……) Makes just enough for our family of 5 (3 small children and 2 adults). You can easily double it for a larger family or if you want left overs.

Ingredients

3 potatoes peeled and thinly sliced

1/2 large onion sliced or diced

1 green pepper diced

6 eggs

1 cup cheese or more if you like lots of cheese!

garlic salt to taste optional

salt and pepper to taste.

Instructions:

Put a couple tablespoons of oil in a deep frying pan and arrange potatoe slices. Sprinkle with salt and pepper. Cook on medium heat until they are somewhat browned on both sides.

Mix the eggs, onion, green pepper and garlic salt and pour on top of the browned potato slices in the frying pan. Top with cheese and cook on low-medium until eggs are done in the center.

That’s it! Easy, cheap and healthy  Potato cheese, egg skillet recipe! :)

Baked Salmon Fillet Recipe with Mayonnaise and Brown Sugar

I Love fish! Especially Salmon! Unfortunately, my husband can’t stand the smell of it and doesn’t care to eat it either, so I don’t get to eat fish at home much. Even when I do, and I make sure to cook it while he’s at work, I just can’t hide it because he’ll smell it as soon as he walks in the door hours later! lol

But I did treat myself to buying some Salmon fillets from Wal-Mart on my last shopping trip and I wanted to share a very, very yummy way to bake a salmon fillet that I learned a few years ago from my husbands cousin. He cooked the Salmon on the grill with this recipe, but you can also bake them in the stove just as well!

 

Baked Salmon Fillet Recipe with Mayonnaise and Brown Sugar

Ingredients:
4oz salmon fillet, fresh or frozen(I thaw mine in the microwave on power level 3 (30%) for 4-5min.)
Approx. 2 tbls Mayonnaise(I’m sure it would taste just fine with light mayonnaise too!)
Approx. 1 tbls. Brown Sugar(or more if you like!)

Preheat oven to 350 degrees.Put your salmon fillet in a greased shallow baking dish or in foil on a cookie sheet or cooking stone.

I like to put my salmon fillet on tin foil with the sides folded up around the fillet to keep the juices from leaking out onto my round Pampered Chef stone.

Next, spread the mayonaise on top of the salmon fillet.

 

Then sprinkle the brown sugar on top of that.

 

Now it’s ready to go into the oven!
Bake fillet for about 12 min. or until the salmon is flaky when you stick a fork into it.

 

 

So that’s it! Very simple, yet sooooooo delicious!!

Texas Hash Recipe-My Favorite!!

Oh, man! Texas Hash is one of my all time favorites! It is awesome, and a wonderful comfort food for me :)  I really wish my husband loved it too, but, he doesn’t (gasp! but….more for me…hehe). He’s pretty picky, so I can only make this on nights that he has designated for himself to get fast food, or I can make it other nights too, but I’d have to make him something else to eat. (too much work! lol)  The kids love Texas Hash though!  So anyway, I got this Texas Hash recipe from my mom who used to make it now and then. Not sure where she got it from. Texas Hash is pretty simple and inexpensive to make, so it works great if you have a really tight budget.

Ok, so here you go!

 

Ingredients:

Texas Hash Recipe

  • 2 large onions (I just use whatever size I have)
  • 2 green peppers
  • 3 tablespoons of shortening (or butter)
  • 1lb hamburger
  • 2 cups canned or fresh tomatoes(diced or stewed)
  • 1/2 cup rice uncooked
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

In a large pan, cook onion and peppers until yellow. Add hamburger.  Cook until it falls apart. Add tomatoes, rice and seasonings and stir.  Transfer to a casserole dish. Cook 45 minutes in a covered casserole dish at 375 degrees.

Easy Chili Recipe-Homemade Chili

Thought I’d share this wonderful, easy chili recipe with you!

I love homemade chili. It is so much better than chili in the can, and I’m sure it is better for you too since you have control over the ingredients. Serve it with cheese and sour cream  and maybe even some green onions on top for a wonderfully delicious flavor!

I got this easy chili recipe from allrecipes.com, but I did make a couple small changes to it to add more flavor.

Easy Chili Recipe Homemade

Ingredients:
1 pound ground beef
1 onion, chopped
1 (14.5 ounce) can stewed tomatoes
1 (15 ounce) can tomato sauce
1 (15 ounce) can kidney beans
1 1/2 cups water
1 pinch chili powder (I think it tastes much better with about a tablespoon)
1 pinch garlic powder (I use about 1/2 teaspoon)
1 pinch of cummin seed(I added this one)
1 tiny pinch of ground cayenne red pepper(I also added this one)
salt and pepper to taste

Directions:
1. In a large saucepan over medium heat, combine the beef and onion and saute until meat is browned and onion is tender. Add the stewed tomatoes with juice, tomato sauce, beans and water.
2. Season with chili powder, garlic powder, cummin, salt/pepper, and red pepper.
Bring to a boil, reduce heat to low, cover the chili and let simmer for 15 minutes. You can also let it simmer longer if you want to let the spices blend even more. I’ve simmered for up to an hour and the chili tastes great!

Makeshift dinner of the week! & Linkup!

Our house is in chaos (see here), with texture on the floors, tools in the sink, piled up dishes and no place to put clean laundry(except on our bed in the bedroom)

So last night I just was not going to try to cook. There was no way, and no room, but we also don’t have the money right now to be eating out, especially since we already had our “pizza” night on Tuesday night instead of our usual Wednesday night.

So I didn’t have much to use that would be quick and easy except for PB &J, so I improvised. I wanted to make quesadillas (sp?) but I was out of cheese, BUT, I did have some cream cheese left, and corn tortillas, and sour cream. So, since I didn’t want to use the stove, I put a little butter on a plate and melted it a bit in the microwave. Then I put one tortilla on the plate with the butter and rubbed it around a bit to coat it with butter, and then microwaved it for 30 seconds or so. I did the same with two more tortillas.

Then I spread some cream cheese and sour cream on each. Then I decided I could use the mini sweet peppers that I happened to have in the fridge and chopped them and put them on. I also chopped up some tomato and added that too. Then rolled them up, and Wha-La! LOL

So it sounds kind of weird, but it actually tasted pretty yummy! One word of advice…. corn tortillas are much better fried on the stove, but, hey, it worked, even if they were a bit chewy :)

And most importantly, the kids liked them. Oh, yes, and as a side I gave them some Zesty Tortilla Combos(I know, I know, not too healthy).

Ground Turkey Meatballs Recipe

Ground Turkey Meatballs over Rice with Green Beans

Ooooh, I just have to share this recipe! I love this ground turkey meatballs recipe that was passed down from my grandma.  I must warn you though. These are so good, I have to watch it or I’ll end up eating half of the meatballs in one night!  These turkey meatballs taste absolutely delish hot, and they also taste great cold the next day for lunch.  I always looked forward to these when my mom or my grandma would make them when I was a kid.

So here goes. A fabulous ground turkey meatballs recipe you are gonna love! And if you don’t,, well then,, you can just give them to me :)

Ground Turkey Meatballs

MeatballsGround Turkey Meatballs Ingredients

  • 2lbs ground turkey
  • 1 medium onion chopped
  • 1tsp garlic powder(or to taste)
  • 1 cup cracker or bread crumbs
  • 1/2 cup milk
  • 2 eggs
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp pepper (or to taste)

Sauce:Ground Turkey Meatballs Sauce Ingredients

  • 1 1/2 cups ketchup
  • 1/4 cup mustard
  • 1/2 cup vinegar
  • 3/4 cup brown sugar

 

Preheat oven to 350 degrees.

Add Ground Turkey Ingredients to bowlMix all of the meatball ingredients together in a large bowl. You can use your hands like I did (just make sure to wash them first) and kneed it like dough! Hey, I think it’s actually kind of fun! Almost like squishing mud between your toes :)

Ok, now make the turkey meatballs about the size you would make cookie dough balls, or you can make them bigger if you want, just make sure to cook them a bit longer so they cook all the way through. Place them in a 13x9x2 inch pan nice and close together.

Mix Ground Turkey Meatballs Sauce

Sauce:  Mix all of the sauce ingredients together and mix well so there are no brown sugar lumps.

Now, put the ground turkey meatballs in the oven to brown for a few minutes (about 5-10 min.) before putting the sauce on. Once they are browned, take them out and pour sauce over each meatball making sure to completely cover each one.

Put them back in the oven, uncovered, for about 40-50 more minutes.

Let cool for a few minutes before serving.  These meatballs are great served over white rice!
